Back on xbox360 you would delete an update file and launch it in order to get onto the table on the map five would I have to mod the game to be able to do so?

Not possible to play older version of the game.
Modding would result in getting a ban, unless you use LAN mode.

Either check if five has its own _patch file and rename it, or remove the barrier in code, either way you are on your own.
