fredingham you don't get in contact with them...
you post your question / issue here in the forums or in the discord and someone who is able to help can offer help if/when they see it.

DirkRockface fred, me, and many others have been making posts about this exact issue. There hasn't been a peep from any staff member. There's someone who has been waiting over 2 months for someone to contact him. Is there really no way for us to contact them? Not a support email or something? Contributors seem to be the closest to staff that respond. It would be great if we could get them pointed in the direction of the Launcher Support forum.

Staff doesn't really do account maintenance / unlocks / removals / recovery / etc. Account access / linkage is up to the member to maintain.
The Plutonium team is a small and WHEN they have time outside of their lives to dedicate to plutonium stuff, it's mostly just to update the launcher, squash bugs, and add features. Not to sift thru all the people who have forgotten passwords, forgot to verify their emails, lost access to their 2fa keys, etc.
Not trying to be a jerk about it, just letting you know the reality is that you kind of are in charge of maintaining access to your own account.

DirkRockface Thank you for being the only person to respond. That's helpful information. I thought they had moderators for the forum that handle this kind of thing. Looks like we're just shit out of luck. How would I go about requesting Plutonium to delete all my data? That's the only other route I can think of. Like how Incogni (sh*t company, I know) does it. That way, my data can be wiped with the notice and I can recreate my account. If not, then oh well. I'll just have to wait for another client since I can't relink my Steam account.

OneKoiBoiBackup it would be the same request to ask a mod to delete your account, but once again, i don't think they would.
Pro tip: As of right now, you only need to link your steam account if you are trying to host dedicated servers that will show up in the server browser. You don't need it to just play. So you can make a new account and not link steam and play just fine
