Pollogom you can't, to move models like drinks or cars you would have to edit the .d3dbsp.ents of the map which is not available.
The best you can do is place additional models via gsc.

Bonus maps are custom maps with models moved around
Bonus maps? you mean DLC maps? They aren't tho? There might be a few maps that are based on older ones like nuketown but they don's just have "models moved around". For those kind of edits you would have to have radiant but activision never released that for bo2 so it's not possible for you to do those edits.
