I have recently discovered that steam displays those names, and I would like to change them to something else. But I am not going to do if that could mean a perm ban.

I had the same issue, then I realize that the game wasn't recorded at all.
Not all the games that we play on the server had been recorded. In fact, plutonium mw3 only saves the first match. At least for now if you want to be sure you need to leave the server when the game ends. Then enter again a new demo file is going to be saved.
