You can with plugins. I don't know off the top of my head the plugin for the zombies banks so you'll have to do some google searching.
By default, your server will spit out logs into whatever file you specify under g_log
in your zm server config.
For this to be really any use to you, you should setup IW4MAdmin like @Koyoto said.
Note that if you have multiple servers, each log file should be named something different in each config's g_log
value.

as loading from steam's folder is buggy atm.
Your dedicated server bat file does not reside in your game folder, either move it there, or replace line 11's %cd%
with the directory of your game.
